Trying to Replicate Debi's Bressola (Read 982 times)

I followed the directions and put my bressola in the wine cooler 9 days ago. I have a Johnson Control unit keeping the temp between 53° to 55°, and a small, low volume computer fan inside to create airflow.  Still trying to keep the humidity up with a bowl of water.
Went out of town for a week, and then came home to find white mold spontaneously growing on the casing. I didn't use any bactofirm (although I do have it on order.) And I was pretty sure I cleaned the cabinet well before starting.  I hope this is the good kind of mold. It looks like what I've seen on deli meats before.
Debi, have you ever had it just appear out of the blue?

The white mold is naturally occurring and once it gets started your golden! I suspect with all the rain you guys get it is not hard to simulate a damp cave.  It will protect the meat from the bad green molds.

I had to start mine with with bactoferm the first time it is extremely dry here in the winter but once I did it now it comes all the time. Still doesn't hurt to use the bactoferm because it will start faster.

Put in a couple more capicola the other day, so I did the bactoferm last night. The batch made up 2-1/2 gallons, so I dipped them all. About how long does it take to start showing?

A couple pics of the capicola going in. It's been 4 days since I introduced the bactoferm, and nothing yet. I keep going over the instructions, and it looks like I did it right. I hope it didn't die during shipping.

Sliced up some of the bressola and coppa tonight. I think I let the bressola go a little too long. It was very hard and dry, almost like jerky. But the capicola was very good, almost a prosciutto texture when sliced very thin.

Looks good. I like to let the Capicola go a little longer. See how it is darker/drier around the edges?  Put it in a vacuum bag and sit it in the fridge a few weeks and it will even out the moisture. I do it every time without even slicing first. Mostly because I am never quite ready to slice it. I keep them whole until I am ready to use and slice one at a time. I haven't peeled mine first but  have heard others say they got slimy if they sealed them with the casing and mold. I have one over a year old that isn't slimy yet.  Smiley

You know you can just use like a 1/4 teaspoon of the bactoferm and I think a 1/4 cup of distilled water and freeze the rest.  use a spray bottle to apply a little and again about 3 days later. If you have a dedicated fridge spray the walls and it will always be there.

I cut the second capicola about a week later. You were right. It was much better.
