Bressola and Dried Beef (Read 1586 times)

Eye of the round was on sale this week so I got two. One will be made into Bressola and one will be Dried Beef. The difference is just a bit less rosemary and the addition of about 0.4% toasted onion and garlic powder. I also add a bit of garlic which is not traditional in Bressola but I like it!

Bressola


Eye of the Round 100%
salt 2.0%
Cure #2, 0.24%
Dextrose 2.3%
Course Black Pepper 0.4%
Fresh Rosemary 0.46%  * Dried Beef - 0.35%
Fresh Thyme 0.46%
Juniper Berries 5 or 6

For Dried Beef
** Toasted Onion Powder 0.04%
** Toasted minced Garlic

1) Trim the meat of all silverskin and external fat.
2) Grind up all the cure ingredients (from salt to juniper berries) in a spice grinder until a fine powder is achieved.
3) Rub half of the cure mixture in to the eye of round, making sure to cover all of the meat, including the ends. Put in a zip-lock bag and refridgerate for 7 days.
4) Turn the meat every couple of days, and rub through the bag.
5) Drain any liquid that might be present and rub in the remaining spice cure. Refrigerate for another 7 days.
6) Soak the beef bung casing in coolish water, with a little white vinegar added. Let this soak for about 2 hours, changing the water a couple of times through the soaking process.
7) Take the meat from its bag, rinse all the cure off thoroughly. Let it sit at room temperature for a couple of hours on a rack.
8) Rinse the casing out under running water. Squeeze as much water from the casing as possible.
9) Stuff the meat in to the casing, tying the open end with a bubble knot (watch the video below to see how to do that).
10) Tie the whole thing up using butchers knots, leaving a loop at one end to hang it from.
11) Hang at 55F and 80% humidity for at least a month – until it has lost 40% of its original weight.

Got side tracked with other stuff and finally got my bungs in so I rinsed and stuffed the Bresaola and Dried Beef into beef bungs, tied and hung.  Not much difference between the two except the amount of moisture and I add a bit more spices to the dried beef.

Giving this a try tonight. All rubbed up and in the fridge. The fresh rosemary really gave the rub a green color.

So from the pic, I take it you sprayed it down with white mold? That's something I don't have.

Actually I didn't have to my mini fridge allows it to go from one sausage to the other -  is called Bactoferm Mold 600
