How do you know when butter is ready.  If it works right it's pretty obvious.

When I was working and buying 9 gallons of raw milk every week I would make butter from the cream on top. It was about 5% butter fat so it was pretty good for butter. I have never made "Cultured butter." Not really sure what the difference is between butter and cultured butter.

It supposedly lasts longer and forms easily. It also has a slightly tart taste. Sometimes it's referred to as European style.

I know that it's hard as a rock in my fridge and from the lack of moisture collecting we did a decent job getting the buttermilk out of it.

Next time I'll just do sweet cream butter and see if we like that better. Tomorrow I'll be making waffles with some of the buttermilk.

That is key for butter it will go racid if you don't wash well. Have you make flavored butters? We used to like what I called french toast butter, and lemon pepper butter for veggies.

Not yet. I hadn't thought of a sweet combination, just savory. Tonight we are making waffles from the buttermilk.

Yes and hey we're good. I added 2 teaspoons of Penzys Baking Spice (mainly cinnamon) to make them more interesting. I still have more buttermilk left. So I guess I'll be forced to make biscuits.  Roll Eyes
