These are made with almond meal so they are gluten free!

Deejays Apple Almond Scones

For the scones:
3 cups almond meal          
¼ teaspoon sea salt
1 teaspoon baking soda
3 teaspoons cinnamon
1/2 teaspoon apple pie spice
1 cup finely chopped tart apples
5 tablespoons Honey
5 tablespoons apple cider
3 or 4 tablespoons milk
4 tablespoons butter melted
1 egg room temperature
Optional : Raisins soaked in water for 10 minutes then drained

4 tablespoons milk
1 few drops of vanilla extract
About 1 cup of confectionary sugar

Directions: for the scones
1. In a large bowl, combine the dry ingredients

2. Melt butter and mix in wet ingredients. Whip together with a fork.

3. Transfer the flour mixture to a large bowl and toss the apples pieces in the mixture.

4. Mix the wet ingredients into dry.  Lightly knead the dough till just combined.

5. Form the dough into a ball, and flatten to 1 inch thick. 

6. Cut each circle into 8 wedges. Using a thin metal baking spatula, transfer each scone to parchment paper lined baking sheet, about 2 inches apart.

7. Bake at 375°F for 10-15 min or till lightly browned. 

Directions: for the glaze
Mix ingredients together until you get a smooth thick liquid. Add more sugar if necessary.

I like to spoon over pastries about 3 to 5 minutes before they are done to get a bit of a crunch to the sugar.
