I posted this awhile back, but it appears the gremlins got it when we were attacked... so here it is again:

Magic Dust (from Peace, Love and BBQ, page 67)

Ingredients:

½ cup paprika
¼ cup kosher salt, finely ground
¼ cup sugar
2 tbs mustard powder
¼ cup chili powder
¼ cup ground cumin
2 tbs ground black pepper
¼ cup granulated garlic
2 tbs cayenne pepper

Directions:

Mix all ingredients and store in a tightly covered container.

Yield:

About 2 ½ cups

Me and the missus love this stuff... It gets sprinkled on just about everything! When I do my BBB chickens (brined beer butt), this is what I use for a rub. Doing a saute of veggies? Use it. Fried fish? Use it. Got a fresh salad? Use it. Making pizza? Use it. Making a fatty? Use it. Deviled eggs? You know. And for the piece d'resistance... sprinkle this on your Atomic Buffalo Turds... awesome!

Experiment with it, have fun with it, but most of all, enjoy it!

Yes this is good stuff! One of the first rub recipes I tried. Reminds me of my cajun mix.

Deejay’s Cajun Seasoning Mix

2 tablespoons salt
1 teaspoon black pepper; fresh ground
1 teaspoon lemon pepper
1 1/2 teaspoons cayenne pepper
1 teaspoon dry mustard
1 teaspoon granulated brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon Vege-Sal or Mrs. Dash
1/2 teaspoon Chili Powder

In a small bowl or glass jar with a lid, combine all the ingredients. Stir or shake to mix. Use immediately or store in a cool, dark place for several months.

Hey Hawg that magic dust sure is good but have you ever tried the Lysanders line of rubs, to me they are absolutely heaven on meat especially the Bourbon and spicy Bourbon rubs..

Oh yeah by the way got a load of Cassapulla subs heading my way

Oh my goodness!!  HH, thanks for posting this recipe for magic dust. I made some up a couple of weeks back but just got round to tring it tonight on some chicken pieces  - truly fantastic  Smiley

Once I get through my jar full, I'll be having a tweak. I also googled the bok... I reckon that'd be a good read, I think I might order a copy

I have the book. Personnally I think you can get as much and more here. That is the best recipe. If your like me and just a book junkie get it.

Thanks for the heads up Mom.

Had the magic dust rub on a pork tenderloin last night, both my wife and I agreed that we found it a bit oon the salty side so there's tweak number 1.  I think I'll make up another batch minus the salt and then mix the two together.

I find most recipes too salty so all my recipes are lower in salt.
